Mac, Creative Suite 3 – Change language

I'm currently using a computer with CS3. The operating system is English but CS3 is all German can I change it to English? If so how?

Buy an English version. InDesign is not a multilingual application.

Can you not choose which language on installation?

No. InDesign is NOT a multilingual application.

There is one exception that might cause confusion. During installation, you are indeed asked to choose a language, but that is so that the license agreement can presented to you in the language of your choice. It does not affect the installed product.
